Citation: While performing an unscheduled records review and observation of carcasses in the chill cooler located off the slaughter floor the following noncompliance was observed. 2 Carcasses were identified as still having approximately 3 inches of spinal cord will in the vertebral column. Carcasses tagged with US Retain tag MPD57516998(animal id 586) and MPD57516999(animal id 590) respectively. Mr. was informed of these noncompliance's and instructed that failure to follow the regulations can result in further regulatory control action.
