Violation:  416.4(a), 416.4(b)

Citation: While performing a scheduled 01B01 at 0705 I noticed no deficiencies were recorded on the plant's sanitation report , yet while entering the kill floor, I did notice a greasy film on the offal cart's pluck tray, therefore I decided to perform an unscheduled 01B02 & upon further examination, I noticed several (5) pieces of what appeared to be bone dust particles in the lower ' viscera portion of the cart The offal cart which was located 3' away from, and perpendicular to the overhead door was tagged with U.S. Rejected tag #223044, I then verbally notified Mr. of the non-compliance, In which he replied there was a problem with the boiler the previous night during clean-up. Mr. took immediate action to clean & sanitize the offal cart, bringing it back in compliance , I then removed the tag and the plant was able to use the cart.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
