Citation: At 0810 while conducting the initial record review component of a 03B02 procedure, I noticed the plant's ongoing verification procedure for thermometer calibration was not performed or recorded for the month of July. The HACCP plan states "[redacted]" Further investigation revealed the previous calibration was performed on 06/23 was verbally notified of this non-compliance of 9CFR 417.4(a)(2)(i), and while I directly observed, he immediately performed a calibration according to the HACCP plan's procedures. The results were acceptable as no deviations were observed. I then concluded no product adulteration had occurred, and processing resumed, as it was not possible to link this NR to a previous 03B or 03C procedure
