Citation: While performing a scheduled 01B02 pre-op inspection procedure at 0710 on the randomly selected table area, I discovered a small crack approximately 3/8" long, in the tapered end of the stainless steel roast stuffing horn, commonly referred to as a "jet netter". this is located on the closest end of first white cutting table as you enter the processing room. This crack would allow meat, fat, etc. to collect as it impedes the cleaning and sanitizing process. I then applied U.S. REJECTED tag #223051 was verbally notified of this non-compliance, and the horn was removed from the processing room, I then removed the U.S. REJECTED tag and production began.
416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
