Citation: At 1400 while conducting a scheduled 06D01 (sanitary dressing procedures) I noticed the lack of steam arising from the hot water sanitizing tank located on the kill floor, I then took a temperature reading of 143 degrees F. concluding this temperature was not sufficient to destroy pathogens, and potentially, could lead to product contamination and or adulteration. I then placed U.S. REJECTED tag #223056 on it. Further investigation revealed no product was affected . was notified verbally of the situation an changed the heating element immediately . tank was refilled with degree F water and rose to in 9 min. the tag was removed & production resumed

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
