Citation: While conducting a 05A01 @ approximately 3:15 PM on Wednesday 4/13/2011 I concluded that the statistical process control chart that reflects the plant's generic E.coli carcass sampling was inadequate. On the chart provided to me upon request, the last entry was 6/29 /2010. I then proceeded to examine the previous 13 individual tests, all of which the results were coming to the conclusion that the samples with collection dates of 7/7,7/8,7/13,7/14,&7/20 were not included on this chart. I have reviewed these test results & chart in the past according to the weekly HACCP meeting MOI's kept on file in the USDA office, with no previous non-compliance arising. When I asked for the most current chart he stated he did not know what happened to the missing chart, perhaps it was misplaced during the review of the plant's recent CFSA findings, & he would try to retrieve a copy for me. This morning @ approximately 7:20 AM on 04/15/2011 I conducted another 05A01 and the chart was still not updated, I then verbally notified the plant was in violation of 9cfr 310.25 (a)(4). then showed me a chart he had started to make yet it was incomplete, with no collection dates noted yet & himself or would provide me a copy as soon as possible.
