Violation:  416.1, 416.4(a)

Citation: After conducting post-mortem inspection at approximately 0840 on the 1st beef slaughtered, lot #119, I proceeded to sanitize my knife and node hook. At this time I noticed the sanitizer tank located on the north wall of the kill floor did not seem as hot as usual. I then used my hand held thermometer to check the water’s temperature, finding it to be 139.9 F. Upon further inspection I noticed the electrical cord had become partially unplugged. I then notified of this; the sanitizer was refilled with F water from the hose and plugged back in. While (kill floor personnel) was splitting the beef and trimming the beef over a period of approximately 15 min. the water in the sanitizer was brought up to a temperature of F. No regulatory control action was taken as the plant implemented corrective action procedures quickly. I do not believe any product was affected or adulterated because of this.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
