Citation: Sanitation Performance Standards (SPS) noncompliance observed during routine inspection activities on this date 10/17/2011.[newline]Location: Carcass Chill Cooler -.[newline] 1) Tubular aluminum storage rack along west wall - soiled - grease / fat / mildew present.[newline] 2) West wall of same cooler - soiled greasy yellowing film present / mildew - namely behind above mentioned storage rack Tag # B15473522 issued to rack and wall.[newline][newline] After slaughter activities had ended for the day I notified Mr. of my noncompliant observations. accompanied me to the cooler, visually observing my findings.[newline] No product involvement was observed - no product stored in immediate area.[newline]As per 9 CFR416.15 corrective actions to bring area into compliance is required. Target date for completion - next official operation on 10/20/2011.[newline] [newline]A review of the Noncompliance Record file in the Gov't office did not reveal similar noncompliance with in the past 90 days.[newline]
416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
