Violation:  417.5(a)(3), 417.5(b)

Citation: At approximately 0900 while reviewing the HACCP Chill Cooler – Product Temperature Log which is used to document Carcass Chill CCP3 the following recordkeeping noncompliance was observed. The establishments Slaughter HACCP plan for CCP3 states . On 12/12/11 the establishment slaughtered swine under USDA inspection and according to the HACCP plan . At this time no value was entered on 12/13/11 as required by the HACCP plan. I informed Production Manager of the noncompliance at which time she stated she had taken the temperature on 12/13/11 which met the critical limit but failed to document the result. A review of the noncompliance records documented the past 3 months did not reveal any with the same cause.

Regulation:

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.

417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
