Violation:  416.1, 416.2(d)

Citation: At approximately 0940 while performing an unscheduled 06D01 procedure the following non- compliance was observed. While walking from the old smokehouse to the new packaging area, water was seen to be dripping. Upon further inspection, it was noticed that steam from the smokehouse was contacting the fan housing, above and to the left of the smokehouse, and running down the wall and dripping onto the floor. Since this area has recently been remodeled, with the wall below the fan removed to take product from the smokehouse to the new cooler or new packaging area, this may result in direct product contamination if left unattended. The area under the fan was immediately rejected using U.S. REJECTED tag B 18 918412. Mr. was immediately shown this non-compliance. This is a non-compliance with 9 CFR 416.1 and 9 CFR 416.2(d). A review of the previous three months NRs reveal no non-compliances with a similar root cause.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
