Citation: At 0900 hrs the following non-compliance was observed: the establishment had not been documenting the values for the CCPs on the correct document for their duck and squab product prior to 07/21/2010. These CCPs include fecal checks for feces and chilling temperatures. In their HACCP plan, the establishment has a form specifically for documenting recordkeeping of Duck/Squab CCPs. This form was not in use. Plant management of notified immediately of this non-compliance. This procedure will be followed up with an 03J02. 417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
