Violation:  416.2(b)(1), 416.2(b)(3), 416.4(b)

Citation: At approximately 0730 hrs., I observed the following. The flap doors entering the Evisceration room from the Shipping area have visible dried protein on both sides of their exposed frames and on the rubber gaskets between them. The exit door from the Evisceration room to the welfare facilities has a detached panel on its lower quadrant. The outer garage door entering the Receiving area has an approximate 1/4 " gap (shedding light), when it is closed and supposedly flush against the ground along a 3 to 4' area along its midsection. Mr. plant president / manager was informed. This is in non compliance with Title 9CFR 416.4(b) which requires non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment to be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. Title 9CFR 416.2(b)(1) requires that establishment buildings including their structures, rooms and compartments should be of sound construction and be kept in good repair. Title 9CFR 416.2(b)(3) requires walls, floors ceilings, doors, windows and other outside openings to be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

Regulation:  

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
