Violation:  416.13(c), 416.3(a), 416.4(a), 416.4(d)

Citation: At approximately 0600 hours during pre-operational sanitation inspection, SPHV found the following non-compliances: 1. Two of the three knives in the metal knife holder in the evisceration room had product residue from production two days ago where the blade meets the handle. 2. There was rust present on the product surface of the metal wires on the giblet table. The plant's SSOP plan (page 4) states that "[redacted]." The SSOP is signed and dated 1/30/11. The knives and giblet table were tagged with US Rejected Tags No. B38264244 and B38264245. Plant manager was immediately verbally notified of these non-compliances. The equipment and areas were released once they were brought back into compliance. No product was affected. Past Similar NRs - Previous Ineffective Plant Actions: Retrain the employee to keep clean the equipment. NR: 1-2011 dated 1/5/2011; NR: 46-2010 dated 12/18/2010

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d)  Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
