Citation: At approximately 0800 hours while conducting a unscheduled O1CO2 procedure to ensure that procedure are being performed to prevent contamination and adulteration to product. I observed the following deficiency  and employee was in the kill room smoking while killing chicken there was a possibility of contamination of product. There is zero tolerance of smoking any tobacco product in the building. I immediately notified Mr. [sanitation manager]verbally,visually,and in writing with this NR,of non-compliance. This is a violation of 416.4[d] room was tag with a U.S RETAINED TAG.NO.B23777042. Mr. took immediate corrective action and had the employees wash down effective area and he state to me that employees will not smoke in building will go outside in the future. At 09:10, I removed my tag after I re-inspected the area. There was no contamination or adulteration at this time, no further action was taken.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
