Citation: At approx 0915 Hours, CSI and SPHV while observing the establishments HACCP records observed the following: The Establishment(New Lee's), were packaging ducks from another establishment. We also noted that the est employees were documenting their tempreture checks on the confucious slaughter form instead of the Duck re-packaging form. This is inconsistent as far as their HACCP plan is concerned. Production supervisor was immedietly notified of the non comliance.
