Citation: At approximately 0615 hours after being informed by the establishment of the completion of their pre-operational inspection and that all areas were found as acceptable; an FSIS pre-operational inspection was performed. The following conditions were observed. 1. The gizzard processing unit contains product fat from previous day's production throughout the rollers. Tag # B38033336 applied. 2. Further inspection revealed one edible receptacle located in cooler # 1 containing poultry juices from previous day's production. Tag 3B38033341 applied. 3. The establishment toilet room was observed in an unclean condition tag # B38033331 applied. Establishment SSOP Plan signed and dated 4/22/11 under " states; " " Establishment Production Supervisor Mr. immediately shown all conditions observed and informed regulatory action will remain in effect until corrective action has been performed and of failure to meet 9CFR 416.1,416.13( c ); 416.4(a);416.4(b). This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
