Citation: At approximately 09:30 Hrs. while performing a schedule task code 01C02 operational Sanitation in order to verify that the establishment was meeting with regulatory requirements of 9CFR 416. I along with Dr. observed inside cooler #2 at the back of plant condensation forming on ceiling. Product was in cooler at the time but not affected. U.S. REJECTED #B39907661 was issued. All product in cooler was covered with plastic sheets.Mr. the establishment sanitation manager was informed both verbally and in writing with this NR that the establishment failed to meet with regulatory requirements of 9CFR 416. (a) (b) and continued failure to meet with regulatory requirements would lead to further enforcement action . This NR is linked to NR# 0039-2011 on 08/03/11 and NR# 004-2011 on 08/13/2011.

Regulation:

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP’s and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
