Citation: On January 7, 2012, at approximantely 0620 hours, after the establishment had performed their pre-operational inspection and before the start of operation, CSI and SPHV observed the following noncompliances. [newline][newline]1. There were five gray barrels in the evisceration/processing room, and one of them its bottom surface inside was dirty with brown residue. This barrel had no markings to identify its use as for edible or inedible. An U.S. Reject Tag (#B39907644) was immediately shown to the plant manager, No product was affected. It was also noted that the markings of "Edible" on these gray barrels are fading away. The evidence was shown to the plant manager, to take corrective action. [newline][newline]2. There was a spill of coffee observed on the transfer table from the scalder to the picker. An U.S. Reject Tag (#B39907645) was applied to restrict the use of this table until corrective action could be performed. The evidence was immediately shown to the plant manager, No product was affected. [newline][newline]This is noncompliance with 9 CFR 416.4(a) for food contact surface violation and 9 CFR 416.13(c). 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
