Violation:  416.1, 416.4(b)

Citation: On Wednesday, February 29, 2012, at approximately 0625 hours, after the establishment had completed their pre-operational sanitation check and prior to the start of the operation, I observed the following non-compliance. In the edible cooler#2 where finished poultry carcasses were stored inside several stainless steel tanks, one side of the walls was greasy, bloody water pool was noted on the floor and a few wing tags, pieces of parts of carcasses/livers were accumulated on the floor underneath some of the stainless steel tanks, creating an insanitary condition. A regulatory control action was immediately initiated with an U.S. Rejected Tag (#B39907634) applied to the affected area until corrective action could be performed. All evidence was shown to the plant manager, No product was affected. This is a non-compliance with Regulation 9CFR416.4 (b). Continued failure to meet the regulatory requirement would lead to further enforcement action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
