Citation: On Thursday, May 10, 2012, at approximately 1000 hours, I observed the following non-compliance. While reviewing establishment's CCP records of on-going verification, verification method for some CCPs was documented only using "O" (for "Observing"), missing "R" (for "Review"). Establishment's HACCP plan for "[redacted]" states that [redacted]." Establishment has not performed the daily review of each CCP record consistently. Evidence was brought up to the attention of production supervisor, Mr. newline]This is a non-compliance of 9 CFR 417.4(a)(2)(iii) for not performing an on-going review of records as required in the HACCP plan and 9 CFR 417.5 (a)(3) for lacking consistent daily documentation on the verification procedure and result of on-going record review for each CCP. Continued failure to meet the regulatory requirements would lead to further enforcement action.
417.4(a)(2)(iii) The review of records generated and maintained in accordance with §417.5(a)(3) of this part.
417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
