Violation:  416.13(c), 416.4(a)

Citation: On Saturday, May 12, 2012, at approximately 0625 hours, after establishment had completed their pre-operational inspection and prior to start of the operation, I observed the following non-compliance.  In edible cooler #2, an empty stainless steel tank, ready to be used for production of the day to hold finished products until packing and delivery, was found with 1" to 2 "-wide rings of white residues from previous day(s) production covering inside walls at about 4" height from bottom of the tank.  A regulatory control action was initiated with an U. S. Rejected Tag (#B38033334) applied to restrict use of this tank until corrective action could be performed.  Evidence was immediately shown to the plant manager, nbsp; No product was affected.[newline]This non-compliance is a violation of 9 CFR 416.13 (c) and 9 CFR 416.4 (a).  Continued failure to meet the regulatory requirements would lead to further enforcement action.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
