Citation: On 01/26/11 at approximately 0745 as I was performing the 06D01 procedure I observed the following noncompliance. In product freezer # 2 there is frozen condensation on the ceiling above and in front of the refrigeration unit in the back of the freezer also there was frozen condensation on several sealed boxes of product under the right hand side of the refrigeration unit. There was also frost build up on the ceiling on both sides of the freezer ceiling starting at the refrigeration unit and extending out about six feet. I checked the SSOP records and no entry was found of this noncompliance. I notified Mr. [redacted] of this noncompliance both verbally and in writing with this NR. Regulation 416.1 states each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. Regulation 416.2(b)(2) states (b) Construction. (2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions. Regulation 416.4(d) states (d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
