Citation: On 02/22/2011 at approximately 1415 as I was performing the 03B02 procedure I observed the following noncompliance. While checking the CCP's I observed on the Cooler Temperature Log the weekly thermometer calibration had been performed for the week of 02/20/11- 02/26/11 on 02/21/11 however you failed to document the time the calibration was performed. I notified Mr. [redacted] of this noncompliance both verbally and in writing with this NR. Regulation 417.5(a)(3) states (a) The establishment shall maintain the following records documenting the establishment's HACCP plan: (3) Records documenting the monitoring of CCP's and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment's HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made. Regulation 417.5(b) states (b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
