The knife sanitizer had product residue around the entire top edge at the water line. The residue was meat and fat and had a cooked on appearance, there was also meat and fat floating in the water.[redacted] was verbally notified of the above noncompliance. No product was involved and no regulatory control action was taken because plant personnel immediately by started to clean the effected equipment. This is a violation of CFR 416.1 General rules. “Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.” and CFR 416.4 (b) “Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.” At 07:50 the knife sanitizer was re-inspected and found acceptable. I reviewed the NR file and found no recent noncompliance of this nature.
