Citation: On July 22, 2010 at 0820 hours Inspector [redacted] performed a scheduled 01B02 task and found the following Non-Compliance; Inspector [redacted] asked kill floor foreperson [redacted] in if the plant had performed Pre-op. He said yes, everything was found to be acceptable. The outside of the Knock-Box door , the shelf that holds the case for the captive bolt stunner, and the case for the captive bolt stunner had mud and filth on it from previous production. [redacted] was notified of the Non-Compliance. Production had not begun therefore no product was adulterated. All mentioned items were cleaned, sanitized, reinspected and found to be acceptable prior to beginning of production. Since immediate actions took place there was no U.S. Rejected tag applied. This Non-Compliance is a violation of 9 CFR 416.13 (c); Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's and 9 CFR 416.4 (b); Non-food-contact surfaces of facilities, equipment, and utensils, used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. The establishment was notified verbally and in writing of this Non-Compliance. The establishment is also notified that any further Non-Compliance with regulatory requirements could result in additional regulatory and/or administrative actions. Management is also advised of their right to appeal this decision delineated by 9 CFR 306.5.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
