Citation: On February 18, 2011 at 1025 hours Inspector [redacted] performed an unscheduled 06D01 and found the following Non-Compliance. On the Slaughter Floor on both the east and west side of the knocking pen, the top rails have paint flaking across the entire top of the rails. Also the shelf used to hold the water pump, above the knocking pen has dirt on the entire surface. This deviation is a Non-Compliance of 9CFR416.2(b)(1): Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. Also 9CFR416.4 (b): Non food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. There was no tag applied since this is a non-contact area. Owner James Wright was notified about this Non-Compliance. The establishment was notified verbally and in writing of this NR of the Non-Compliance. The establishment is also notified that any further Non-Compliance with regulatory requirements could result in additional regulatory and/or administrative actions. Management is also advised of their right to appeal this decision delineated by 9CFR306.5
