Citation: On October 13, 2011, at approximately 0930 hours, while performing an unscheduled 06D01 procedure, Inspector [redacted] found the following Non-Compliances: the floor in the area where the inedible barrels are stored, there was an accumulation of blood and inedible materials on it which had become rotten and was giving off a foul odor. Also, the gasket for the cooler door of the chill box was broken and has pulled away from the door hanging loosely. This exposed the seam of the door covering, which had an accumulation of dirt and hair in it. No product adulteration was observed. Plant owners Jim and William Wright were notified of the Non-Compliances. These are in violation of 9 cfr 416.2(b)(2) which states; Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions. Also, 9 cfr 416.4(b) which states; Non-food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. The establishment was notified verbally and in writing of this Non-Compliance. The establishment is also notified that any further Non-Compliance with regulatory requirements could result in additional regulatory and/or administrative actions. Management is also advised of their right to appeal this decision delineated by 9 CFR 306.5.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
