Citation: At approximately 0900 while performing the scheduled SPS verification task, the following noncompliance was observed. In the slaughter area of the plant where the head inspection station is, there was an overhead ceiling light that was extinguished. When lite, this light allows the proper lighting for performing the inspection of the heads of cattle. Mr. was notified about this verbally and in writing. This is a noncompliance of 416.2(c), Lighting. Mr. [redacted] is also advised of his right to appeal this decision as delineated by 9 CFR 306.5.


416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.
