Citation: At approximately 11:45 am on September 15, 2010 while performing and unscheduled PBIS task 06D01 the following noncompliance's were observed. On the kill floor there is blood and grease stains on all the walls, there is a stain, green and yellow in color around the top and sides of the frame where the carcasses pass through, there is blood and dust on the top of the paper towel dispenser. In the inedible room, there are blood stains and pieces of fat on several areas of the ceiling. Mr. [redacted] was verbally notified of the above noncompliance's. This is a violation of part 416.1 General rules. "Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.2(b) Construction (2) "Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions". I then reviewed the NR file and found a similar noncompliance report. Past Similar NRs - Previous Ineffective Plant Actions: No response NR: 19-2010 dated 9/15/2010

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
