Citation: At 0800 hrs. on the day of 01/21/2011 I was performing the unscheduled task of 06D01 and the following noncompliance's were observed. A) Final wash and trimming room. 1) water dripping from ceiling. 2) rail support brackets with paint and rust issues. 3) water pipes rusty and flaking paint. 4) cracking paint on the ceiling. 5) support rail stained. 6) cooler door has rusty bolts and flaking paint. B) Compressor room is cluttered and just needs a general cleaning. C) Storage rooms need a general cleaning and stuff raised up off of the floor. D) Kill floor 1) Unused light fixture rusty. 2) flaking paint and caulking on windows. 3) flaking paint on light and water pipes. Mr. [redacted] was verbally notified of the above noncompliance's. This is in violation of regulation's 416.1 general rules. Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions. I then proceeded to check for similar NR's from 90 days of the same root cause and found none.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
