Citation: At approximately 0720 on December 16, 2011 while performing an unscheduled PBIS task 06D01 the following noncompliances were observed. In the final wash area the ceiling has several cracks and peeling/flaking paint in an area approximately 10' x 10' of the ceiling. There is also chipping paint along the wall behind the smokehouse. On the kill floor there is a piece of fat in the center of the ceiling approximately four inches long and one inch wide. The beams on the kill floor have a dark greasy film on the white flashing. The four windows along the wall have chipping paint in the seam between the glass. There are also cobwebs in the corner of the ceiling above the knocking pen. Mr. [redacted] was verbally notified of the above noncompliances. This is a violation of part 416.1 General rules. Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.(b) Construction. (1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions. (2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
