Citation: While conducting pre-operational sanitation inspection on slaughter floor at 08:00, I noticed the following noncompliance's 1. The wall behind the cutting table have a build-up of brownish residue continuing up the wall four brick layer high. 2. On the wall next to the release door on slaughter floor have a residue build-up three brick layers high. 3. The door between slaughter floor and lactic acid wash room have calcium build-up film of residue from carcass washing. 9 CFR 416.13 (a) states: Each official establishment shall conduct the pre-operational procedures in Sanitation SOP's before the start of operations. 9 CFR 416.13 (c) states: Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's The SSOP pre-operational plan states that [redacted] At current time no product being produced on slaughter floor, and product produced would not be in contact with defected area. I notified [redacted] of the noncompliance and that this serves as written notification that failure to comply with regulatory requirement could result in additional regulatory and/or administrative action.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
