Citation: On November 30, 2010 at approximately 07:40 while performing a scheduled 01B02 ( pre- operational sanitation verification task) at establishment 08609. I observed the following non-food contact surface non-compliance. No product was involved. In the new processing area, on the smokehouse there is a running line of black, sticky residue on the front side of smokehouse machine, Also small amount of debris such as pieces of wrapping paper, cardboard pieces on the floor around the smokehouse. On the smokehouse cooler the lower half of the freezer door there are smudges of brown/black protein residues build-up on door, and tile wall on smokehouse cooler have a medium brown residues build-up on tile surfaces. No U.S. Rejected/Retained tag was used. The establishment employee designated (Mrs. [redacted] was notified and agree to clean the smokehouse freezer at closing today, and delegated other employee to clean the smokehouse. 9CFR 416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 9CFR 416.4(b) Non-food surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and adulteration of product. This document serves as written notification that you're failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action. You are hereby advised of you're rights to appeal this decision as delineated by 306.5 and/or 381.35 of CFR.
