Citation: On 03/02/2011 at approximately 07:50 hours, Establishment #08609 was presented for pre-operational sanitation inspection. While performing 01B02 SSOP procedures, I observed the following noncompliance with the requirements of 9CFR 416.13(c) and 9CFR 416.4 (a). The carcass splitting saw was found to be contaminated with meat and fat particles on the blade, and on the outside housing from a previous day operation. As a result of these finding a regulatory control was implemented. The employee designated to perform pre-op was notified verbally. At 08:20 the slaughter floor was re-inspected and found to be compliance. No product was involved the noncompliance was found and corrected before the start of operations. 416.13 (c) states "Each official establishment shall monitor daily the implementation of the procedures in the Sanitation Sop's" 416.4 (a) states " all food contact surfaces, including food contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. Plant management was informed orally of this noncompliance and this noncompliance records provides written notification. This document also serves as written notification that failure to comply with regulatory requirement(s) could result in additional regulatory or administrative actions.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOPís before the start of operations.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
