Citation: At approximately 0715, on 5/31/2011 while performing a scheduled 01B02, the following noncompliance was observed. While performing a Pre-Operational Sanitation check of the processing room and the equipment, the stainless steel table that is facing the north wall, had fat residue and red meat particles on the under side of the top of the table. The table top is not connected to the table legs so when it was flipped over to look at the under side of it, everything mentioned above could be seen. I immediately informed the Product supervisor, Mr. [redacted] verbally and in writing with this NR. No rejection tag was needed because the table top was cleaned and sanitized immeditely. Upon re inspection it was found clean and free of debris. This is in violation of 9 CFR 416.13 (c); Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's and 9 CFR 416.4 (b); Non-food-contact surfaces of facilities, equipment, and utensils, used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product, and this document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.Mr. [redacted] and Mr. [redacted] are also advised of their right to appeal this decision as delineated by 9CFR 306.5.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOPís.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
