Violation: 416.1, 416.2(b)(1), 416.2(b)(2)

Citation: The following facility non-compliances were observed while walking through the establishment. [redacted] was notified of the non-compliances.
1. In the bathroom there was a leaky water supply valve on the eastern wall to the right of the hand sink. Potable water was slowly dripping onto the floor of the bathroom.
2. On the Kill Floor and in the Carcass Wash room there was a buildup of organic material on the plastic coverings for the splitting saw's counterweight and the scale's readout box.
3. In the doorway between the Kill Floor and the Carcass Wash Room there was a buildup of organic material (mostly fat) on the door and jam.
4. In the Office hallway there was loose metal flashing on the wall under the raised doorway to the kill floor. The flashing had pulled away from the wooden wall backing.
No product was involved with these non-compliances.
Once Notified of these non-compliances [redacted] took these immediate corrective actions:
He had maintance personnel replace the leaky water valve in the bathroom. (item #1 - corrected).
He had sanitation personnel replace the plastic covers on the splitting saw's counterweight and on the scale's readout box. (item #2 -corrected).
The sanitation personnel cleaned and sanitized the door & jam free of the build-up. (item #3 - corrected).
Maintance personnel put an order in for new flashing to be fabricated for Item #4 [redacted] and informed me that it would be installed as soon as the new piece comes in.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
