Citation: At approximately 0800 while performing a un scheduled 03B02 procedure the following non compliance was observed. CCP # 1 for this HACCP category is "Meat storage & Finished Product storage " The Establishment is using a continuous temperature Data Logger to monitor the temperature of the cooler and freezer. the establishment downloads these read outs on a daily basis. While reviewing these records and the corresponding Pre-Shipment review log the establishment has no documentation to show that a record review is being performed for the records being produced for this CCP Reg 9CFR 417.5(c) states Prior to shipping product, the establishment shall review the records associated with the production of that product, documented in accordance with this section, to ensure completeness, including the determination that all critical limits were met and, if appropriate, corrective actions were taken, including the proper disposition of product. Where practicable, this review shall be conducted, dated, and signed by an individual who did not produce the record(s), preferably by someone trained in accordance with 417.7 of this part, or the responsible establishment official Mr. [redacted] was notified verbally and in writing of this NR of this non compliance.

Regulation:
