Citation: At approximately 0830 hours while reviewing records during a scheduled 03J02 procedure the following was observed. The "Slaughter Monitoring Log " dated 5/411 and 4/20/11 No time was documented for the zero tolerance inspection on trim rail CCP#1 or a time documented for the direct observation of the zero tolerance. A record review performed by the plant at 1700 on 5/11/11 performed by Mr. showed ok results and made no mention of these lack of documentations. Mr. was notified verbally and in writing of this NR of these non- compliances Reg 9 CFR 417.59 (a) (3) states Records documenting the monitoring of CCP's and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment's HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made Reg 9 CFR 417.5(b) states Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. 417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
