Citation: At approximately 0730 hours while performing an 01C02 procedure in the cut up processing area of the establishment the following conditions where observed. A Roast stuff horn located on the second tier of the table located next to the sausage stuffer had particles and dust build up. In the kettle cook area of the room there was particles of dried meat and a dead fly carcass also a build up of grease around the kettle itself. In the spice room and ingredient storage room located just off the cut up room near the smoke house these conditions were observed. Hooks used to hang meat in the smoke house and hooks used for smoking bacon had dried meat particles and greasy build up the white buckets used to store these hooks also had a greasy build up and were just generally dirty. A plastic type box labeled as "Jerky Cure" had some mold starting to grow on the lid surface. A stuffing tube used for stuffing sausage had dried particles of meat from a previous days production at one end of the tube. A check of the plants operational and pre-operational records dates 8/10/11 showed no mention of these conditions Mr. [redacted] was notified verbally and in writing of this NR of these non compliances. Reg 9 CFR 416.4(a) states All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product Reg 9 CFR 416.4(b) states Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product Reg 9 CFR 416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
