Violation: 416.2(c), 416.2(d)

Citation: While performing preoperational sanitation inspection at establishment 08630, on 7/25/11, the following facility noncompliances were found at approximately 0700 hrs. [newline]1. Two ceiling lights were out in the north end of the large holding cooler. These lights are near the cooler door adjacent to the slaughter floor. [newline]2. The large floor stand fan safety grill was found with dust and dirt partials attached to the surrounding grid. I notified Mr. [redacted] of the above mentioned noncompliances, of the violation of 9CFR 416.2(c), 9CFR 416.2(d), as well as the violation of his own SPS program.

Regulation:

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
