Citation: While performing a scheduled PHIS Sanitation Performance Standard verification task at 8:30 A.M. on Tuesday, December 6, I found the following deficiency which generates this written report. On the exhaust hood located above the steam cooking vessel in the processing area is a switch for activating the exhaust fan. The switch cover plate is made of a metal, and this cover plate was coated with very small rust flakes. When I rubbed my finger on the switch cover plate, small particles of the rust adhered to my finger tip. This cover plate is a non food contact surface, but its location does allow for raw food products to pass beneath. No food product was affected. I notified [redacted] of this finding. [redacted] verbally stated that this switch cover would be sanded to remove the rust. Regulation 416.2(b)1 states for Construction: "Establishment buildings, including their structures, rooms, and compartments must be of sound construction and kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions."
