Citation: On 09/16/2010 at o730 while performing procedure 06D01 I observed the following. The inside of the cooler door between the cooler and the kill floor has fat, blood and grease smears on the surface. The door jam above the door has a dark brown residue on it directly above the track. There was no product contamination observed due to this noncompliance. 416.2 Establishment grounds and facilities. (b) Construction... (2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
