Citation: On 10/21/2010 at 1000 while performing procedure 06D01, I observed the following. #1- in the raw product processing room I observed the following. (a) The spare grinder not in use has several specks of fat and meat on the side and top. (b) The three portable cart that hold lugs of raw product have specks of meat, blood and grease smears on there frame. (c) The towel dispenser has a build up of grease on and around the lever used to dispense the towels. (d) There is an eight foot light and one bulb in another eight foot light not working. #2- Truck loading area (a) The floor is cluttered with meat scraps, an open bag of rock salt and an old sprayer and sprayer parts. The was no product contamination observed due to these noncompliances. 416.1 General rules. Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated. 416.4 Sanitary operations. (b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. 416.2 Establishment grounds and facilities. (c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets. This document serves as notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(c) Light. Lighting of good quality and sufficient intensity to ensure that sanitary conditions are maintained and that product is not adulterated must be provided in areas where food is processed, handled, stored, or examined; where equipment and utensils are cleaned; and in hand-washing areas, dressing and locker rooms, and toilets.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
