Citation: On 05/10/2011 at 0800 after the plant had performed their preoperational sanitation inspection and before the start of operations I performed procedure 01B02 and observed the following. In area #5 of the kill floor I observed a scabbard and knife with blood and grease smears on the inside of the scabbard and on the surface of the knife blade and handle. I notified [redacted] and the scabbard and knife was cleaned and sanitized immediately No reject tag was applied and there was no product contaminated due to this noncompliance. I checked the plants sanitation records and there was no documentation of this non-compliance. 416.13 Implementation of SOP's. (a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP's before the start of operations." 416.4 Sanitary operations. (a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
