Citation: Today at approximately 0745 after the establishment presented its slaughter inspection facilities for pre-operational sanitation inspection, during the course of performing an unscheduled 01B02 SSOP procedure of those facilities noncompliance was observed with the requirements of 9 CFR 416.13 (a). The noncompliance consisted of: (1) particles of fat and fat residue on several carcass trolleys and gambrels. As a result of these findings, regulatory control was applied at 0750 hours (U.S. Reject Tag No. B 6398454). A review of the establishment's sanitation report disclosed that the noncompliance had not been observed or recorded by the establishment employee(s) designated to perform pre-operational or operational sanitation inspection activities for the establishment. At 0755 the slaughter facilities were presented for reinspection by plant management and was found to be acceptable. The facilities were released for use at that time. The noncompliance did not result in adulteration of product and no further action was taken. Plant management was informed orally of this noncompliance, and this noncompliance record provides written notification of that noncompliance. This document also serves as written notification that failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
