Citation: On 10/27/2011 0800 while performing a unscheduled 06D01 I observed the following. #1-Specks of fat and meat on the legs and outside lower portion of the #2 grinder. #2-loose paint and rust on the paper roll holder. [redacted] was notified and the equipment was cleaned, sanitized, and oiled immediately. There was no Reject tag applied. 416.1 General rules.Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated 416.4 Sanitary operations.(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. There was no product contamination observed due to this noncompliance This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.

Regulation:
