Citation: On 12/29/2011 at 0800 while performing a SPS verification Inspection I observed the following. In the raw product processing room I observed #1-grease smears on the back of the vacuum machine used for raw product #2-about 10 small breaks / punctures in the wall between the two grinders #3- grease smears on the lids of the buckets used to store plastic bags #4- a brown residue on the paper towel dispenser. In the restroom I observed #1-a brown residue on the paper towel dispenser. In the office I observed #1-grease smears on the wall to the left of the restroom door. There was no product contamination observed due to this non compliance


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(b)(1) Construction. Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
