Citation: At approximately 0800 hrs. while performing an O1C02, I observed in the batching/processing department, water droplets forming on a ceiling tile inside the entrance of the department next to the cooling unit. There was a brownish color streak on the ceiling tile with droplets forming about 15 inches long, leading from an opening in the tile where the light was attached. About 12 inches from the line of droplets, at the opening in another ceiling tile where a black and yellow cord comes from the ceiling I observed a similar streak of droplets about 5 inches long. I immediately informed Mr. [redacted] Supervisor, and Mr. [redacted] Q.C. of the non compliance. Mr. [redacted] and Mr. [redacted] took immediate corrective action by stopping production and moving product out of the area, and covering product with plastic. Mr. [redacted] called maintenance to the area, when the maintenance man removed several ceiling tiles excess amount of water ran out of the ceiling area where the tiles were removed. After the non compliance was brought under control, and area was cleaned and sanitized, production resumed. No product was affected and no further regulatory control was needed. The plant is not meeting 9 CFR 416.2 (d). Past Similar NRs - Previous Ineffective Plant Actions: Further planned action(s) response was either not implemented or was ineffective. part of response states that Overhead condensation will be observed as often as necessary and removed so no product is affected. NR: 22-2010 dated 6/23/2010 This document serves as a written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.


416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
