Citation: At approximately 1300 hrs. while reviewing the plant's paper work in the Q C office, for 08-11, 08-12,08-13,2010, I observed on the JFM - SSOP - Form-001 ( Deboning SSOP Record) and JFM-SSOP-Form -004 (RTE And Bacon SSOP Record), that on the Boning- Condensation and RTE and Bacon Condensation Inspections, ( initial inspection), that they were marked with an X - Rejected (Unsanitary). They were then (Re-inspection ),marked with a Check mark- passed (sanitary). The was no Deficiency Explanation or SSOP Corrective actions documented. I informed Ms. [redacted] i HACCP Coordinator of the findings. The plant is not meeting 416.16(a). which states, " Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP's and any corrective action taken." I spoke to Ms. [redacted] HACCP Coordinator, and she said, the designated employees performing plant's pre-operational sanitation preformed corrective action but failed to document them on the forms.

Regulation:

416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOPís and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOPís as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOPís shall authenticate these records with his or her initials and the date.
