Citation: At approximately 0930 hr. while walking thru the processing /batching department, I observed a cooling unit on the ceiling at the bologna/sausage stuffing area dripping water. The water droplets were formed at the left corner of the unit and dropping a steady drop of water onto the floor. In the middle of the unit at the white pipe water droplets were dripping from the elbow joint and at the area where the pipe was connected to the unit water was dripping from that area also at a steady drip. Directely below the dripping water a metal tank full of rods used to hang product was getting dripped on . I observed a plant employee take two rods from the tank and place them on the cage marked Jumbo bologna # 0239. the employee then continued to hang 3 jumbo bolognas on the rods. I immediately took regulatory control action by informing Mr. [redacted] (lead person) of the department of the non compliance. Mr. [redacted] took immediate corrective action so no further regulatory action was needed. Mr. [redacted] Q.C. was also informed of the non compliance. Production resumed when sanitary conditions were restored. the plant is not meeting 9 CFR 416.2(d) & 416.4(d)


416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
